Chicken Parmesan

Ingredients

Ingredients
4 skinless boneless chicken breast halves
to taste black pepper
to taste salt
2 large eggs
1 cup panko
3/4 cup parmesan cheese grated and divided in half
2 TBLS all-purpose flour or more
1/2 Cup olive oil for frying

1/2 Cup

spaghetti sauce
1/4 Cup mozzerella grated
1/4 Cup chopped fresh basil
1/2 Cup Provolone cheese grated
2 Teaspoons olive oil

 

Preparation

  1. Preheat oven 450 F.

  2. pound chicken to 1/2" thickness & season with salt & pepper

  3. Beat eggs

  4. Mix panco, 1/2 cup parmesan cheese and set aside

  5. Sift flour over chicken breasts for even coat

  6. Dip chicken into eggs then coat with the panco mixture. Then let chicken rest for 10 to 15 minutes

  7. Heat 1/2 inch oil in large skillet on medium heat until it begins to shimmer

  8. Cook chicken until golden brown - 2 minutes per side only.

  9. Transfer chicken to baking dish. Top with 2 TBLS spaghetti sauce. Layer with mozzarella, basil, provolne cheese. Sprinkly remaining Parmesan over top. Drizzle a little olive oil over top

  10. Bake for 15 to 20 minutes or 165 F
