skinless boneless chicken breast halves |

panko |
3/4 cup |
parmesan cheese grated and divided in half |
2 TBLS |
all-purpose flour or more |
1/2 Cup |
olive oil for frying |
1/2 Cup |
spaghetti sauce |
1/4 Cup |
mozzerella grated |
1/4 Cup |
chopped fresh basil |
1/2 Cup |
Provolone cheese grated |
2 Teaspoons |
olive oil |
Preparation
- Preheat oven 450 F.
- pound chicken to 1/2" thickness & season with salt & pepper
- Beat eggs
- Mix panco, 1/2 cup parmesan cheese and set aside
- Sift flour over chicken breasts for even coat
- Dip chicken into eggs then coat with the panco mixture. Then let chicken rest for 10 to 15 minutes
- Heat 1/2 inch oil in large skillet on medium heat until it begins to shimmer
- Cook chicken until golden brown - 2 minutes per side only.
- Transfer chicken to baking dish. Top with 2 TBLS spaghetti sauce. Layer with mozzarella, basil, provolne cheese. Sprinkly remaining Parmesan over top. Drizzle a little olive oil over top
- Bake for 15 to 20 minutes or 165 F
